No Bake Gluten Free Granola Bars submitted by Emmy Kim

This is a no bake recipe.  You can add any additions you want. I added raw pumpkin seeds and sunflower seeds.

Ingredients

  • Toast crispy 8 slices of Three Bakers Great Seed bread, use mortar and pestle to make approx. 1 cup of bread crumbs.
  • 1 cup rolled oats
  • 1/4 cup honey
  • 1/4 cup creamy natural peanut butter
  • 1 cup of any additions: pumpkin seeds, nuts, etc.

Instructions

  1. Warm honey and peanut butter if it’s too hard to mix.
  2. Mix all ingredients in a large bowl.
  3. Transfer to an 8×8 baking dish.
  4. Line bottom with Glad cling wrap, sticky part facing up.
  5. Press down until flattened – cover top with cling wrap and use round object like a sauce jar or cup to flatten uniformly.
  6. Once flattened, place in freezer for at least 1-2 hours.
  7. Pull the frozen block out of pan, chop evenly into bars, enjoy!
