gluten free sandwich

Follow along as Kerrin Sturchio of Your Allergy Angel shares her Three Bakers creations through our new series, GF Sandwich of the Month. Step inside for January’s healthy sandwich!

I feel the month of January is all about making a better version of yourself.  Take a moment to think about the food industry and the changes we have seen in the last five years in the United States.  It seems a bit confusing to me, that is why I try to only buy fresh organic vegetables, organic meat, wild caught fish & of course my favorite gluten free bread of all times, Three Bakers!

I love smoked salmon & the benefits that come from it! I wanted to create a healthier version of the typical smoked salmon bagel with pounds of cream cheese. Also, I was forced to think creatively since I can’t eat dairy.

For the Sandwich  

  • Three Bakers 7 Ancient Bread
  • 4 oz. smoked salmon of your choice
  • 10 small grape tomatoes (thinly sliced)
  • ½ small red onion, thinly sliced
  • 2 heads leafed bibb lettuce

For the Spread

  • 2-5.3 oz. plain yogurt
  • ½ small yellow/white onion
  • ½ cup fresh dill
  • 1 small lemon for juice

For the Pickled Radishes   

  • 1 bunch of radishes
  • ¾ cup apple cider vinegar
  • ¾ cup water
  • 3 tablespoons of honey
  • Salt, (just a dash to your liking)
  • Red pepper flakes (add or remove for your taste buds)
  • 1 garlic clove
  • Black peppercorns (just a few)

Directions

1.   Add small yellow/white onion, dill, & lemon to blend or food processor.  If you don’t have one you can just dice the onions & dill by hand (you can add lemon to yogurt if you do this by hand)
2.   In small bowl mix plain almond-milk yogurt alternative, onion, dill & lemon (put in fridge to stay cold, at least 30 minutes)
3.  Wash and cut off ends of the radishes, then thinly slice & place in a mason jar or whatever you can find
4.   Pour in apple cider vinegar & water then add honey, salt, red pepper flakes, black peppercorns & garlic clove (set aside)
5. Thinly slice red onion & grape tomatoes

Time to put together the SANDWICH

  • Toast or thaw Three Bakers 7 Ancient bread
  • Spread dill yogurt spread (if you like a lot of sauce add to both sides)
  • Place pickled radishes on top of spread
  • Add smoked salmon
  • Place tomatoes, red onion & bibb lettuce
  • Serve with sauce & pickled radishes
