Anyone looking for a cozy meal to enjoy with the family this winter season? This gluten-free cheese crusted chicken will be a family favorite, for sure! The best part is that it is still healthy, and it only takes a few ingredients to make. Give it a try!
Gluten-Free Cheese Crusted Chicken & Broccoli
Ingredients:
- 1 broccoli head
- 1 package Three Bakers Real Cheddar Cheese Snackers
- 1 package thin chicken cutlets
- 2 eggs
- 2 tbs olive oil
- 1/4 cup nutritional yeast
- Salt and pepper
Directions:
First, preheat oven to 425. Cut broccoli, and then drizzle olive oil, salt, pepper, and nutritional yeast on top. Mix all together well and place in oven for 25 mins.
Next, take the whole bag of Snackers into a baggie and smash them up until they look look similar to a bread crumb consistency. Whisk up eggs with some salt and pepper; dip the chicken into egg batter and then the Cheddar Cheese Snackers mixture.
The next step is to brown the chicken in a frying pan with a bit of oil. Let the chicken brown for 1 to 2 minutes per side. Put the chicken aside. Once the broccoli timer is down to 12-10 minutes, give the broccoli a good mix, and place the chicken with it. When timer goes off your food is ready to enjoy!
