If you’re anything like me, Thanksgiving rolls around and in all the excitement of finding gluten free stuffing you by 2, 3, maybe 5 boxes and are left trying to figure out what to do with all that extra stuffing.
Now I’m always up for eating a plate of leftover stuffing, but this recipe combines all that extra stuffing (if you don’t have extra, buy some) with your leftover turkey and some dried cranberries for a tad bit of sweetness.
Three Bakers Gluten Free Stuffing mix is so packed with flavor that you don’t need to add anything else, which makes these gluten free stuffed acorn squash a snap to pull together.
This is one meal that will impress!
Acorn Squash with Gluten Free Stuffing
Recipe:
- 2 acorn squash, halved and seeded
- 1 cup turkey (or cooked ground sausage)
- 1 Tablespoon butter
- ½ cup dried cranberries
- 1 ½ cups water
- ½ box Three Bakers Gluten Free Stuffing Mix
Directions:
Preheat oven to 350 degrees.
Sprinkle acorn squash with salt and pepper.
Bake for 15 minutes, cut side down.
Meanwhile, add butter to a large saute pan.
Add in turkey and cranberries, sautee for 2 to 3 minutes.
Add water and bring to boil.
Mix in stuffing mix.
Stir until water is absorbed, about 3 minutes.
Fill acorn squash with stuffing mixture.
Cover with foil and bake 30 minutes.
Remove foil and bake additional 15 or until tops are brown and acorn squash can be pierced with a knife.
