What is a pizzadilla? The idea came from, what we all know is as a quesadilla ( kāsəˈdēyə ). The word quesadilla derives from the words queso (cheese) and tortilla. A flour torilla can be filled with any type of cheese, meat and/or veggies. It is then heated in a pan and then folded.
Now, lets talk about my Pizzadilla. Who doesn’t LOVE pizza? I also love the taste and texture of a panini pressed sandwich or crust. I knew that in order to put my pizza in a press it had to have two crusts on both side, just like a quesadilla. I cut the pizza in half, added my meat and veggies then placed the second half on top….then pressed away. The texture and taste was amazing! The possibilities are endless. You can fill these frozen pizzas with just about any ingredients you want. Since this idea, I have made three different varieties.
What are some ideas you can come up with?
Gluten Free Pizza – Turkey Pizzadilla

- 2 TBS sliced black olives
- 2 TBS sliced mushrooms
- 2 TBS parsley, chopped
- extra mozzarella for top, optional pizza sauce for dipping
Directions:
1. Cut frozen pizza in half. Add all ingredients, on one half of the pizza. Carefully add other half
of pizza on top. Place in preheated panni press on high heat for approx. 5-7 mins, or until toasted.

Note: Can also be cooked in toaster oven or cooktop skillet. If using the skillet method heat on one side until toasted, flip and toasted other side.
I was raised in and around an Italian family. All my life I cooked and everyone around me cooked. It was my life and still is. In 2013 I had to go gluten-free for health reasons. I was devastated to learn that I can no longer enjoy bread and pasta, that I was so used to eating every day. Can you imagine an Italian girl not eating bread or pasta? During the last few years, I have experimented with all kinds of different products. Searching for a good tasting bread has been a struggle because there was not much available. I was super excited to find Three Bakers Rye Style bread while visiting CT, my home State. I was even more excited to learn it is available locally here in FL. It is absolutely amazing!
