When it comes to holiday food, there is one thing that rings true no matter what your food traditions – leftovers are the best! A popular way to enjoy all the fixins is by combining all those delicious flavors into the handheld treat of a sandwich. We think you’re going to love this recipe idea from food blogger, Angela Litzinger of Angela’s Kitchen.
Leftover Thanksgiving Gluten Free Turkey Melt Sandwich
serves 2
- 4 slices Three Bakers Gluten Free Great Seed Bread
- 2 to 3 tablespoons butter or coconut oil
- 1/4 cup cranberry sauce
- 4 slices turkey
- 6 slices brie or one avocado, pitted and sliced
- 1/4 cup fresh spinach leaves
Butter one side of each slice of bread.
Dividing between two unbuttered sides of two bread slices, spread cranberry sauce on bread.
On top of cranberry sauce next layer turkey, brie or avocado, and spinach leaves. Top with each sandwich with a second slice of bread, buttered side up.
Place sandwiches in a preheated skillet, cooking until bread is golden. Use a thin spatula and carefully flip sandwiches to grill other side. Cook until golden, cheese is melted and ingredients are heated through. Serve warm.
