In the summer time I’m always looking for quick and easy snacks. This Caprese Bruschetta hits the spot- it’s light, refreshing, full of flavor and perfect for a quick snack or an appetizer at get together.
Three Baker’s Omega Max bread makes the perfect base. To start I toasted a few pieces in the oven. I like to keep my bread in the freezer. To toast I just grab a few frozen slices and stick them in the oven at 350 for a few minutes. I love the texture of it and that it has the Omega Threes. My kids won’t eat fish, but they can still get their Omega’s when they eat this bread!
The toppings are simple- thinly sliced tomatoes, fresh mozzarella and basil, drizzled with olive oil and balsamic glaze. To take it to the next level I add a sprinkle of Italian seasoning and a sprinkle of salt.

Ingredients:
- Three Bakers MaxOmega Bread
- Thinly sliced tomato
- Sliced fresh mozzarella
- 1-2 teaspoons olive oil
- 1 Tablespoon gluten free balsamic glaze
- ½ teaspoon Italian Seasoning
- ¼ teaspoon salt
Instructions:
- Toast bread lightly.
- Top with tomato and mozzarella.
- Sprinkle with Italian seasoning and salt.
- Drizzle balsamic glaze and olive oil over toast.
